Apple Cider Vinegar has long been a store cupboard staple in homes across the country and a traditional folk remedy for centuries. With the ongoing interest in health foods, Apple Cider Vinegar has quickly become the latest on-trend superfood. Why?
The Vinegar is thought by many to help with everything from arthritis, heart disease and diabetes to weight loss and has a loyal legion of fans taking their diluted morning shot of ACV every day. Believed to be a natural antibiotic which helps to lower blood sugar levels whilst keeping you fuller for longer and therefore aiding weight loss, the product sounds like a one stop step to health!
Our favourite, Willy’s ACV, is made by the lovely team at Chase Farm in Herefordshire, when they’re not busy creating award winning vodka, gin and delicious popcorn. Their vinegar is made from traditional cider apples which are hand-picked from their 300 year old orchards producing low yields of sharp fruit. To make ACV, the cider apples are simply pressed and left to ferment creating completely natural cider. With a dose of fresh Herefordshire air, the mixture eventually turns in to vinegar and the process is complete, leaving an unpasteurised, raw product with nothing but organic goodness.
What’s the Mother?
As the product is unfiltered and unpasteurised the natural product maintains ‘the mother of vinegar’ a good bacteria that you can see as a cloudy, cobwebby clump in the bottle. It comes directly from the apple pulp and is a substance made up of a form of cellulose and acetic acid bacteria that develops on fermenting alcoholic liquids. It then helps to turn alcohol into acetic acid with the help of oxygen. Willy’s ACV is 5% acid.
It’s believed that the major health benefits of apple cider vinegar come from ‘the Mother’.
Even without taking the lauded health benefits, heavily discussed, into consideration, the beautiful natural product makes a delicious addition to the kitchen. Superb mixed with oil, honey and mustard, it creates flavoursome homemade salad dressings and marinades.
